嚥下食とは何か

嚥下食は、加齢や疾患が原因で、食べ物をうまく飲み込めなくなった方のために、とろみをつけたり、ゼリーにしたりすることで 飲み込みやすくする食事のこと。医療分野での長年の研究と工夫によって、日本で独自に進化し、見た目も、味も、温かさも、 普通の食事と変わらないことから、“嚥下食は生きる喜び”につながるとして、注目されています。

What's "Engay foods"

Engay-foods is food designed for those who have trouble swallowing due to aging or various medical conditions by adding thickeners or using gelatin to change the consistency. This diet is unique and was developed in Japan by c ontinuous research and creative solutions in the medical care field. Engay-foods resembles regular foods in every aspect from the appearance to taste and even the heat, and is now attracting attention for its "contribution to increase the quality of life."

なぜ必要か

いま、食べ物をうまく飲み込めないという嚥下障害の方が増えています。 今後、超高齢社会の到来でさらなる増加が見込まれています。

Why is it necessary?

Presently, more and more people are suffering dysphagia or difficulty to swallow foods. The number will increase as Japan enters the super aging society.

海外でもヒントに

世界でいち早く超高齢社会を経験する日本。 そこで進化を遂げた嚥下食は、今後、同じ課題を抱える世界各国 で高齢者食のヒントになるのではないでしょうか。 日本人のホスピタリティの集大成ともいえる嚥下食を、 いま、新しい日本食として世界へ!!

It can be a hint in the world

Japan enters the super aging society, which no other country has ever experienced. We think that the e ngay-foods that has evolved in Japan can provide a possible clue about foods for elderly people as countries around the world have to deal with an aging population in the near future. Let's promote engay-foods or new WASHOKU (Japanese Cuisine) which shows a c oncrete example of Japanese hospitality to the world!

柴本勇/聖隷クリストファー大学リハビリテーション学部言語聴覚学科教授、学科長。聖隷クリストファー大学大学院リハビリテーション科学研究科教授。学術博士。専門は口腔老化制御学・摂食嚥下障害学・ 言語聴覚障害学。University of Arkansas at Little Rock 言語病理学科卒。東京医科歯科大学大学院医歯学総合研究科博士課程修了。中伊豆温泉病院、聖隷三方原病院、聖隷浜松病院、国際医療福祉大学教授を経て、2015 年4 月より現職。President, Asia Pacific Society of Speech Language and Hearing をはじめ、多くの委員等を務める。講演・論文執筆・著書多数。
Isamu Shibamoto is currently the chairperson while serving as professor at the Department of Speech-Language-Hearing Therapy, School of Rehabilitation Sciences, Seirei Christopher University, and professor at t he Graduate School of R ehabilitation Sciences, Seirei Christopher University. He received a P h.D. and his specialties are gerodontology (controlling changes with aging), dysphagia rehabilitation, and speech, language and hearing disorders. He had graduated from the Department of Audiology & Speech Pathology, University of Arkansas in Little Rock and completed the doctoral program at the Graduate School of Medical and Dental Sciences of Tokyo Medical and Dental University. He previously worked at Hot Spring of Rehabilitation Nakaizu Hospital, Seirei Mikatahara General Hospital, Seirei Hamamatsu General Hospital. After he served as professor at the University of Health and Welfare, he started his current positions from April 2015. He also serves as the president of the Asia Pacific Society of Speech Language and Hearing, and is a member of several committees. He is a very energetic lecturer, author of many academic papers, as well as a writer.

飛澤美奈子/長年、全国の病院や介護施設に勤める管理栄養士対象の「嚥下食実践セミナー」の講師を務める。病院、施設はもちろん、地方新聞社との共催イベントなど、地域と連携したセミナーでは、ご 当地嚥下食のレシピを考案。また2013 年11 月ナース専科より発刊した在宅介護者向けレシピ本「おうちでできるえんげ食」で、一般家庭でもえんげ食が負担なく作れるよう、工夫を凝らしたレシピを考案する。
Minako Tobisawa has given lectures at "seminars for practical engay-foods" held for registered dietitians working at hospitals and nursing care facilities across Japan. She leads lively seminars in local communities and has developed many recipes called "local engay-foods," not only for hospitals and nursing facilities, but also for events held in collaboration with local newspapers. In November 2013, she published a recipe book for home cooks titled“ Engay-foods at Home” from the Nurse-senka Community and provided recipe ideas for Engay-foods that can easily be prepared at home.

元「暮しの手帖」編集長、エッセイスト。1965 年東京生まれ。多方面のメディアにてエッセイスト、編集者として活躍。2006 年から15 年3月まで、約9 年間『暮しの手帖』の編集長を務める。その後、「くらしのきほん」編集長。新聞、雑誌の連載の他、ベストセラーに「今日もていねいに」「しごとのきほん くらしのきほん100」他多数。NHK ラジオ第一「かれんスタイル」のパーソナリティとしても活躍。
He is an essayist who was born in Tokyo in 1965. He served as the chief editor of a life style magazine "Kurashi-no-techo (Notebook for Daily Life)" for almost nine years from 2006 to March 2015 and is currently working as an essayist and editor for various mass media. He has been writing many serial articles in newspapers and magazines and published many books including bestselling titles like "Kyomo-teineini (Live decently each day)" and "Shigoto-no-kihon kurashi-no kihon 100 (100 tips for the basics of business and daily living." He also works as a radio personality for "Karen Style" at NHK Radio 1.
